The Fox X-Men run is thirteen films made across twenty years, and it contradicts itself more than once on purpose. X-Men: Days of Future Past rewrites the timeline from inside the story, which retroactively turns several earlier films into optional viewing.
That is unusually convenient. Most franchises make you decide what to skip. This one tells you.

The rule this franchise hands you
Days of Future Past ends by undoing X-Men: The Last Stand and a good deal of what came before it. Those films are still worth watching on their own terms, but nothing afterwards depends on them having happened.
What is left is a clean spine: the first two films, the prequel that restarts the cast, the film that resets the timeline, and then the endings.
What you can safely skip
Six of the thirteen, and none of them for being bad.
- X-Men: The Last Stand: undone on screen by Days of Future Past. Watch it for the fight, not for the story.
- X-Men Origins: Wolverine: contradicted almost immediately, including on the character it introduces. Logan tells that story better.
- The Wolverine: a self-contained film set in Japan. Nothing later needs it.
- X-Men: Apocalypse and Dark Phoenix: the last two of the prequel run, and between them the reason the run ended.
- The New Mutants: finished, shelved, and released after the studio changed hands. Connected to nothing.
What people skip for the wrong reason
Two get skipped on a misunderstanding.
- X-Men: First Class looks like a reboot you are allowed to start after. It is the film Days of Future Past depends on completely.
- Deadpool and Deadpool 2 get written off as comedies outside the story. They are the part of this franchise that survived the studio sale, and the only part the MCU has carried forward.
The shortest coherent version
Four films: X-Men, X2, First Class and Days of Future Past. That is the spine, and it stops at a genuine ending rather than a cliffhanger.
Add Logan for the finish the character earns, and the two Deadpool films if you want the thread that continues.
