Start with Parasite
It is the most widely seen, the most immediately gripping, and the first non-English-language film to win Best Picture. It is also the cleanest demonstration of his central move: a film that changes shape without warning and without breaking.
Then Memories of Murder, which many Korean critics consider his best — a procedural about the country's first serial killer case that slowly reveals itself to be about incompetence and helplessness.
The English-language ones are different
Snowpiercer, Okja and Mickey 17 are broader, louder and more openly satirical than the Korean films. Snowpiercer is the best of them — class war on a train, told one carriage at a time.
If you meet him through those you get a slightly cruder version of what he does. The Korean-language films are where the tonal control is.
The debut
Barking Dogs Never Bite (2000) is a black comedy about apartment-block dogs and the least characteristic thing he has made. Worth it once you like him, not before.
