No puzzle here — watch them as they came out. What is worth knowing is that Mission: Impossible is two different franchises wearing the same name.
The first four are largely standalone, each handed to a different director with a distinct style. From Rogue Nation onward the films connect directly, and the last two are one story split in half.

Where it becomes serialised
Rogue Nation (2015) is the turning point. It introduces Ilsa Faust and the Syndicate, and everything after it builds on what came before.
Fallout is a direct sequel to Rogue Nation. Dead Reckoning and The Final Reckoning are explicitly two halves of one film — watching the second without the first makes very little sense.
Can I skip the early ones?
You can start at Ghost Protocol (2011) and lose almost nothing. It is where the modern era of the series really begins, and it explains itself.
That said, the 1996 original is a genuinely good De Palma thriller and quite unlike the rest, and Mission: Impossible III gives the series its best villain. The one most people skip is M:I-2, and few would argue.
The peak
Fallout (2018) is the best of them and one of the best action films of its decade. If you want to know whether this series is for you, that is the film — though it lands harder with Rogue Nation watched first.
