Availability changes by country and by week, so this searches JustWatch rather than guessing.

Can you skip The Acolyte?

Yes, on a first watch. It is self-contained, and nothing in the main Star Wars story depends on it. Come back to it later if you want more. Show only the Star Wars essentials.

Skippable, and it is the earliest thing in the chronology, which makes it another trap for anybody following this page's in-universe order. It is set a century before The Phantom Menace, among a Jedi Order at the height of its power, and it was cancelled after one season with its plot unresolved.

The premise is the most interesting thing Lucasfilm has greenlit in years: a murder mystery in which Jedi are being killed, told so that the Order is the institution under examination rather than the heroes. The idea that four Jedi could do something indefensible on a remote world and close ranks about it afterwards is a genuinely strong one for this setting.

The execution is inconsistent. The dialogue is flat in long stretches, several characters behave as the plot requires rather than as people, and the series spends an entire episode retelling events you have already seen from a second angle without adding enough to justify it. The lightsaber choreography and the fight staging are the best in live-action Star Wars.

It was the subject of a large and organised campaign against it before and during release, which makes its reception difficult to read cleanly. It ends on a setup for a second season that will not arrive. Watch it for the sixth and seventh episodes if at all.
